Goodbye, Ruby Tuesday.
Jaindl Land Co. plans to demolish the vacant restaurant at 3995 Tilghman St. in Allentown and put up — yes! — a medical office building.
Medical offices are popping up everywhere, so why not in west Allentown? The former Ruby Tuesday building has been vacant for years.
The Allentown Zoning Hearing Board will consider the Jaindl plan for a two-story office building at an Aug. 24 meeting.
Jaindl Land Co. commercial and industrial developments cover 21.5 million square feet in the Lehigh Valley, according to the company’s website. The Jaindl family has been farming for generations and began developing land in the 1960s with its first residential project.
The proposal for the office building at the restaurant site went before the Planning Commission in July.
The Allentown Zoning Hearing Board will meet at 7 p.m. on Monday, Aug. 24, in Council Chambers at City Hall, 435 Hamilton St.
Below is the Jaindl item from the meeting agenda:
- A-2026-00530 3995 Tilghman St Appeal of Jaindl Land Company to DEMOLISH

Also: Rolling Stones’ Ruby Tuesday video. Yes, the restaurant has been gone for years but I couldn’t resist making the obvious connection.
